Ensalada de Coditos (Macaroni Salad)

Jeff joins Jo's dad to share you their family's version for macaroni salad. This is a super easy and delicious recipe that you can share with your loved ones as well. Bring it to the next family party or picnic and watch as everyone asks for the recipe too!
1 lb elbow macaroni
2 tbs salt
Water for boiling the pasta
1 cup white onion, chopped
8 oz green olives, drained and chopped
6.5 oz roasted red peppers, chopped
3 eggs, boiled and chopped
14 oz mayonnaise
Let's begin with our macaroni salad. We have water, salt and the elbow pasta. We are going to add salt to the water first.
We have to start boiling the water, once the water is boiling, then we will add the pasta.
We are going to start preparing the mix for the macaroni salad, which is made of: boiled eggs, green olives, roasted peppers and onion. First, we are going to start chopping the eggs. We are going to cut them in pieces that are about 1/8 of an inch.
Now we have the eggs chopped so let's move them to a plate so we continue cutting our next ingredient, which are the olives. We are going to cut them all at once to make it all simpler and easier for everyone. We chop the olives in like less than 1/8 of an inch because we don't want them to disappear in the pasta.
Our next ingredient is the roasted red peppers. Let's cut them small, basically chop them.
Our last ingredient is the onion. And we are going to do the same, cut it in very small pieces so that it disappears inside the macaroni salad.
Our second to last step before we mix the pasta is to make the mayonnaise mix with our ingredients. Add the mayonnaise to a bowl. Then, add the onions, olives, peppers and eggs and mix it all thoroughly.
Once the pasta has finished boiling then we will add the mayonnaise mix to the pasta. Make sure to cook the pasta al dente so that is has plenty of body. Strain the pasta and rinse it with cold water.
While the pasta is still warm, mix the pasta and the mayonnaise thoroughly. Try the salad and check whether it needs to be adjusted for salt.
Once the salad is ready, put it in the fridge until it is cool. About 30 minutes or so and then enjoy!
